Summer seasonal beers are in full swing along with the heat. My favorite beer to drink in the hot weather of June, July, and August is a refreshing hefeweizen. It has something to do with the carbonation and flavors of banana and clove that makes it so delicious. In this article I'm going to share with you Fluke Brewing's new Hefeweizen recipe and how we formulated it. Water, malt, hops, and yeast and the four basic ingredients in every beer so lets examine each of them in order to make a great summer hefeweizen. </div>

What is a Wendigo you ask? Besides our kickass beer. A Wendigo is a mythological demonic half-beast creature appearing in the legends of the Algonquian people. The Wendigo looked like a gaunt skeleton recently disinterred from the grave. Modern science believes Wendigos are extinct and killed off by the modern day zombie apocalypse boom. Spring and fall are my favorite times of year to go camping. The weather is perfect; cool nights and warm days without excessive heat or bugs. Every Memorial Day weekend a group of good friends go on a week long canoe/camping trip. This is one of the most relaxing and enjoyable time of the year for me; as we float down the Big Fork River and sit around the fire drinking craft beers, sharing memories with my best friends. <br>

About 3 weeks ago I preemptively replenished the soil with 11 bags of fresh manure to rejuvenate any lost nutrients since last summers harvest. I timed it well just before we received 10" of snow. My hope was the extra layer of soil would help insulate the plants a bit until the low temperatures finally rose above freeze levels and when the snow did finally melt, the melt water would pull some of the fresh nutrients down towards the roots to give them a good start to the summer.<br>

I worked up quite the
thirst, and thought what better way to quench it than with some locally brewed
suds. The place to go in the relatively small town of Jackson Wy has to be
Snake River Brewing which features an amazing brewpub with some delicious food,
as well as of course their award winning beers. To learn more about Snake River

had 8 beers on tap at the time of my visit and offered a convenient flight of
5oz tasters. So for $12 I got 8 -5oz tasters = 4O oz of mostly tasty beer. My
overall impression was that this breweries beers are hit or miss. Some are such
as the seasonal Pandamonium, and the Snake River Lager are very very good,
while others such as the Powder 8 Porter and the OB-1 are in my opinion
actually quite bad. Many of the beers are not overly flavorful, and just seem
to lack a little something. Read on below to see Snake River Brewings
description of each of the 8 beers they had on tap, as well as some of my own

this beer style fairly self-explanatory. The classic banana and clove-like
flavors are derived from a specific Bavarian yeast. Because the beer is
unfiltered, these dynamic yeasty flavors come through strongly. There is merely
a hint of hop flavor added so as not to compete with the yeast notes.</div>

malt and plenty of Cascade hops. Golden in color, it has a citrusy hop flavor
which is followed by a crisp, firmly bitter finish. Pale ale is a great foil to
spicy ethnic foods and can also complement a salad well. 5.2% abv.</div>

use of several hop varieties for a subtle hop note. An authentic German lager
yeast strain adds to the true flavor of this beer. The malt forward
profile of Snake River Lager makes it a fine complement to pizzas and red
meat. The alcohol content is 4.8% abv.</div>

Brewings winter seasonal beer, and damn is it good. I was fortunate enough to
get a taste of it, as apparently early January is the last time it will be
served on tap, ever… It was so good in fact, that after convincing the bar
tender to sell it, I had to purchase a half gallon growler of it! At 8.2percent
you have to be careful, it will sneak up on you, the alcohol content is hardly
noticeable in the flavor. I can’t say I’ve had a Belgian style Quad before, but
if others are as good as this, I will be looking for more in the future. </span></span></div>

Porter</b>:</span> Porter was first brewed in London, England in the early 1700’s. At
the time two basic beers existed: a light and a dark. The dark was more
expensive and drinkers got into the habit of mixing the two to stretch out the
premium brew. A wise brewer began making a medium dark beer to save the
barkeeps from having to mix at the taps. The beer was named after its biggest
fans: the porters handling baggage at the local train stations. This brown
porter is deep ruby in color and transluscent. The alcohol content is 5%.</div>

We researched the style and found some recipes that seemed to be similar to what we wanted in our Red Ale. Those characteristics we were looking for are: good maltiness/body, pronounced hoppiness, and a Ruby red color. From the recipes we found, we gained some good ideas that helped us develop our own recipe. The hops in this beer include: Northern Brewer (bittering), Columbus (aroma), and Amarillo Gold (dry hopped). This is sure to beer a great winter beer with enough kick to warm you up in this Minnesota winter!<br />

Enjoyed a few Summit EPAs last night at the Bruce Springsteen and the E Street Band concert!!! They played no stop for over 3.5 hours!!! Over the course of the night Bruce crowd surfed the pit, brought an 88 year old on stage and danced with her, and had the crowd going all night! No wonder they call him the Boss.<br />

It is a busy time of year for us but we managed to find time to harvest our first batch of home grown hops. I will cut straight to the stats and spare you the agony of reading on anymore.<br>

Our totals looked like this...<br>

September 1st we harvested 6oz of mature, Cascade hops and used them to wet hop our first attempt at a Harvest Ale which turned out great.<br>
<br>
Roughly a week later we harvested the remaining Cascade hops which totaled another 2lb of wet hops. After drying this equated to roughly 13oz of dried, leafy hops.<br>
<br>
Finally, in the third week of September, we harvested the Centennial hops which equaled out to 0.5lb wet and after drying resulted in 1.5oz of dry leafy hops.<br>

Sorry for the lack of activity lately. This fall has been crazy busy and unfortunately brewing has been put on the back burner. To get back into the mix we have a big week planned. Wednesday we will be brewing up another batch of the <a href="http://fluke-brewing.blogspot.com/2012/03/dangerross-pale-ale-recipe.html" target="_blank">DangerRoss Pale Ale</a>. Followed by a double brew day Saturday, where we will be brewing up our famous <a href="http://fluke-brewing.blogspot.com/2012/02/double-octane-wayne-ipa-double-octane.html" target="_blank">Octane Wayne IIPA</a> and a new Pumpkin ale recipe. In conjunction to brewing, we will have some meat cooking on the smoker.<br />

Last night we made a starter for our upcoming brew day on Wednesday. Everything was going smoothly and we were only 10°F away from pitching our yeast, and THEN....<br />

Luckily no brewer was hurt during the incident and the starter was saved. We carefully transferred the starter to a growler, ensuring no glass ended up in our beer. Look for more updates from our upcoming brew days!</div>

It has been over a year since we had made the jump to all grain brewing! It is now time to make a couple brew kettle upgrades. We will be adding a thermometer, a bulkhead with ball valve, and a sight gauge. These upgrades will make it easier to for taking temperature and volume measurements throughout the brew day. <br>

Summer flies by when you are having fun growing hops and brewing beer along with all the other fun stuff to do. In the <a href="http://fluke-brewing.blogspot.com/2012/05/hop-yard-build-2012-part-2.html" target="_blank">last update</a> back in May, we had finished the trellises, laid manure, formed the hills and finally transferred the hops outdoors to their real home. I had mentioned last time that with all the hot weather we have had this summer, it took some trial and error to find the right balance of watering to keep the plants happy. Many of the larger plants had a bit of a setback due to the sudden change in environment. We are happy to report that they have all made a full recovery and are doing very well, especially the Cascades. Some of which are easily 14-15 feet in length!<br>
